Dr. Barbara Ingham’s Updated Pickle Bill Fact Sheet

 

Dr. Barbara Ingham, UW-Madison Food Science Professor and UW-Extension Food Safety Specialist, recently updated a fact sheet on the Pickle Bill (Wisconsin Act 101).  The Pick Bill has been in effect since 2009 and it allows individuals to process and sell canned fruits and acidified vegetables without a food processing license.

From Dr. Ingham:  “Please note, the sale of unlicensed home-canned items is restricted to a very few venues, e.g. regularly scheduled farmers’ markets and select community and social events.  Sale of ‘pickle bill’ products are not allowed at flea markets, roadside stands, retail outlets at a farm or orchard, school sporting or fund-raising events, and craft shows. In addition, the ‘pickle bill’ allows sale of only home-canned fruits and acidified vegetables – no bakery, no dried foods, no flavored vinegars, no items containing meat, dairy or eggs, etc.”
