Bushel and Peck’s is a natural foods store and deli located on Main Street in Beloit. A large kitchen serves the needs of the deli/café and has been designed with excess capacity for processing, including meat processing. Jackie Gennet, co-owner of the store, began to chop and freeze excess produce from the local farmers’ market spring of 2009 with an eye toward “product incubation.”
