Lamb Live & Carcass Evaluation and Lamb Culinary Products

Join Todd Taylor, Bernie O’Rourke and Jeff Sindelar, UW-Madison Animal & Dairy Sciences along with Cody Hiemke, Niman Ranch Lamb Program Manager for a virtual program on Thurs., March 11 starting at 7:00 p.m. The live lamb evaluation will be recorded, and the team will review the same lamb carcasses in the NEW UW-Madison Meat Science and Animal Biologics Building. Then, the team will fabricate the carcasses into cuts and other products.
